The orginal pancake house in winnipeg

We had the apple pancake and I must admit in NYC, I had only eaten maybe 3-4 times at the chain, since it was closer to Queens then Brooklyn. Ruff to go to Queens via Brooklyn- and worse and area in between the two. However me and my best friend annie moy used to skip Edward Murrow High school just to go there!!!! I have always loved food. The trip would be a long 2 hour bus extravaganza, we switched buses more then 5 times. So in Winnipeg, me and the Troyster finally ventured back. I was happy to find the apple pancake up to par.
Here is the recipe. I will actually make it in a few weeks after I get my birthday gift of a kitchen aid.

If anyone tries it first let me know how it turns out.

BAKED PANCAKE HOUSE APPLE PANCAKE

3 tbsp. milk
3 tbsp. flour
1/4 tsp. baking powder
Dash of salt
2 eggs, separated
3 tbsp. sugar
2 tbsp. butter
1 1/2 - 2 apples, pared, cored and sliced
Pyrex dish shaped like cake pan, 9 or 10 inch
2 tbsp. sugar
1 tsp. cinnamon

Combine flour, baking powder, salt and egg yolks and 3 tablespoons milk. Beat 2 egg whites with 3 tablespoons sugar (gradually) until soft peaks form. Fold in flour mixture.

Melt butter in baking dish. Arrange apples in bottom of pan and sprinkle with mixture of 2 tablespoons sugar and 1 teaspoon cinnamon. Cook over low heat for 5 minutes. Then turn apples over and pour batter over apples. Bake 10 minutes at 400 degrees. Serve immediately.
